Another Year, Another Key Lime Pie Cake

Some of you may recall several years ago that I concocted a key lime pie cake for Mr. K.’s birthday, and it turned out very nicely. It’s actually become something of a tradition–if three years is enough time to call something that–that Hubs gets something key-lime-y for his birthday (last year I made a key lime pie ice cream, which was okay, but I put too much lemon in it so don’t consider it a major success).

Anyway. Thursday’s key lime pie cake (Mark II) was a roaring success: white cake with layers of key lime, whipped cream and crumb-crust.

The Best Garlic Breadsticks Ever

I promise.

So, there’s a certain “Italian” chain restaurant in the US. I bet you know the one. I actually tended bar at one for a time, even, and although it wasn’t a great place to work for it wasn’t as bad as some. Opinions on their food are somewhat divided, but I admit I have a special fondness for it, for a number of reasons, and I’m not ashamed, either.

But. One thing I haven’t seen anyone disagree on is the deliciousness of their garlic breadsticks. Because seriously, those are some awesome breadsticks.

The other night I was making pasta. Just a very quick pasta, with some homemade bolognese I made and froze a few weeks ago. And I had a craving for some garlic bread to go with it. Lovely, soft, buttery garlic bread. (Some of you may know that I recently figured out–finally!–how to make yeast work, with the result that I’ve been a bread-making fool for the last two months. Sandwich breads, focaccia, dinner rolls, cinnamon rolls…yum yum yum. Anyway.)

I Googled the recipe for this particular restaurant’s breadsticks. And found a couple that looked likely. To my surprise, none of them used actual bread flour; they used regular AP flour. They were pretty basic, bread-wise: flour, yeast, water, salt, melted butter, and a little sugar. And the comments left on those recipes were pretty good.

But I started thinking. Hmm. They don’t use bread flour, and they’re supposed to be Italian, and I *bet* the restaurant uses something a bit spiffier than just plain old AP flour. Well, Italian 00 flour works great in focaccia bread, and in pastas. And 00 flour makes breads softer; something to do with protein levels and fineness of the milling, I don’t know all the science exactly, but I do know that 00 flour can generally be used in a lot of recipes where AP flour is, only it’s a bit softer. Since soft is exactly what these breadsticks are supposed to be, and since I had 00 flour (of course; I currently have about eight different types of flour in my pantry), I figured, why not?

Next I looked at the liquid. All just water, really? I’ve done some breads with all water, some with water & milk, and some with sour cream. The dairy ones are softer. So again, I thought, okay, let’s replace some of the water with milk. And while we’re at it, let’s add a little honey, because not long ago I made some dinner rolls with honey and milk and the hubs pronounced them “So good, you could actually sell these.” They really were good.

I don’t knead for long. Dan Lepard, in his SHORT & SWEET, makes a good case for a brief knead, and I’ve had great results with his method (oh look! That link goes to the HarperCollins UK site! Look what else is there–CHASING MAGIC, which was released yesterday!). So I basically knead just long enough to bring the dough together, then give it another short knead ten minutes or so later, and then another before I shape the dough. Normally I do two other ten-minute-interval short kneads, but again, I was going for very soft here.

So. This is the dough I made. I bought a kitchen scale a few months back, an inexpensive little digital one, so these are measured in grams. Also, I use ml for the liquids, because that’s the easiest way for me to get the temperature right, as you’ll see.

500g Italian 00 flour
10g fine salt (I used regular Morton’s iodized salt, but you could use sea salt or whatever)

whisk those together in a large bowl.

In a measuring cup mix:

1 Tbsp honey
100 ml boiling water
200 ml cold whole milk (not 2% or skim, I used whole, which I usually have to bake with)
(This will give you liquid that’s the perfect temperature for yeast; 100 ml boiling to 200 ml cold. It really works. You don’t even have to take its temperature. 300ml is about 1 cup, so you could do 1/3 cup boiling to 2/3 cold. But my measuring cup has both so it’s just as easy to use ml. You could of course mix it all and microwave it to the right temp., but I don’t have a microwave. I do have an electric kettle.)

Add to that:

2 Tbsp sugar
5g dried yeast.

You can use dried active or quick rise or whatever kind, it doesn’t matter. You don’t *have* to bloom the yeast if you’re using any kind but regular dried, but I tend to anyway just to make sure it’s alive. Give it a stir and let it sit for a couple of minutes while you melt:

2 Tbsp butter.

Let the butter cool for a minute or two, until you can stick your finger in it without it burning, and add it to the liquid/yeast mixture.

Dump the liquids and yeast into the flour/salt, mix it until it forms a dough, and knead it for a minute or two until it comes together and is fairly smooth. Then put it back into the bowl–some recipes say to oil it, and you can do that, but I don’t always bother; I’ve never had a problem with the dough sticking to the bowl, frankly–cover it with plastic, and let it sit somewhere to rise.

Two things about the rise: One, all the fat in this dough means it will rise slowly. It’s because the fat does something to impede the yeast a bit. So while a less-fatty dough may double in size in an hour, this one will take maybe 1 1/2 or even 2 hours.

Two, here’s what I do to make a nice warm place for the yeast to rise. You can try a few things, actually. If your oven is on you can set the bowl on top of it, but this could get too warm. Some people recommend turning the oven on its lowest setting for ten minutes, then turning it off, opening the door a bit, and setting the bowl inside.

Here’s what I usually do, and I do the same after the dough is shaped. I set the bowl on top of the toaster and flip down the levers to turn the heating elements on. I let it sit about ten-fifteen seconds then turn the toaster off. This sends a bit of warmth rising to the bowl, but not too much, and the warmth lingers. And, as I check the bottom of the bowl during the rise, if the bowl feels too cool I can repeat it quickly and easily. No messing about with oven dials and worrying it’s too hot or heating too slow or moving oven racks about or how-far-should-I-leave-the-door-open. I just flip the toaster on for a few seconds. Easy-peasy.

I rise my dough in a really cheap see-through plastic bowl. I’ve used my nice melamine bowls, but I like these better because they’re see-through, which not only makes it easier to watch the dough rising, but also because I am always convinced I’ve done something wrong and the dough won’t rise, and with the clear bowl I can lift it up and look at the bottom. See, as the yeast starts to work little bubbles form in the bottom, little pockmarks. They start at the edges and move inward. So I can make sure the yeast is working before I actually really notice the dough rising, by looking for the pockmarks in the bottom.

Anyway. It took about 2 hours, I think, for the dough to double in size. I kneaded it a bit, shaped it into hot-dog-bun-like rolls–mine were a little too big, I only made six of them. I think next time I’ll go for ten equal pieces. Anyway. Shape them into the rolls, set them on a piece of parchment on a baking sheet, and then back onto the toaster for another forty-five minutes or so until they’ve doubled in size again.

When you set the shaped bread onto the toaster, turn the oven on to 400F.

Stick the risen rolls into the oven and set the timer for seven minutes. Now in a small saucepan over the lowest possible heat, melt about 1/2 cup of unsalted butter with 2 tsp of garlic powder. The recipe I had called for 2 tsp of salt, also, but it turned out a bit too salty, I think, so next time I’ll cut the salt to 1 1/2 tsp. Anyway, mix the garlic powder and salt into the butter and stir and stir. Don’t let it boil or color.

And yes, you can probably use real garlic. I can hear some of you gasping at the garlic powder. But honestly, I’d be worried about real garlic coloring or cooking in the butter. I’d be worried that the flavor isn’t intense enough or is too intense, or rather, that you’d have to use so much garlic to make the flavor right that it would feel like you spend half an hour mincing garlic. But you could, sure. I use real garlic for my other garlic butters and breads. But I was happy enough with this one.

When the timer goes off pull the bread from the oven and baste well with the butter. Give it a nice coat. Then stick it back in the oven for a further seven minutes (rotate it as you put it back).

The bread should be done after that (unlike other breads, because of the melted butter and the extra softness, the sticks won’t sound hollow if you tap the bottom). Take it out and baste with the rest of the butter. Baste it well and baste it thick. I didn’t use all the butter but I used most of it, probably about 4/5 of it. It’s gorgeous, with the shiny wet butter and little bits of garlic powder.

Eat while still warm, if you can even wait for it to cool down enough to be called “warm.” I swear this bread is SO SOFT. SO delicious. So squishy and buttery-garlic-y and lovely. I was one happy little breadmaker. I barely even wanted my pasta bolognese. I just wanted garlic breadsticks.

The More Things Change…

Well. Things totally do change, don’t they? I certainly have changed, and I will prove that now.

Over the weekend, the hubs and I were looking for something. We couldn’t find it. We tore the house apart hunting for it, and in the process came across a lot of old pictures and a stack of my old report cards from first, second, and third grade. At my elementary school, you got one of three grades, basically, and then there was a space for the teacher to write a comment.

You’ll see how very, very different I am. Maturity has taken me in its grip and made me its bitch.

Totally Uncool Excitement

Lookie! I got nominated for an award! Goodreads is doing its “2010 Goodreads Choice” awards–I guess it’s for best or favorite books of the year, I couldn’t find something that said exactly what, and it doesn’t matter much anyway–and CITY OF GHOSTS is one of the fifteen Paranormal Fantasy nominees!

I think it’s totally obvious I’m going to win, considering what nobodies the other nominees are. I mean, whoever heard of Charlaine Harris, Laurell K. Hamilton, or Jim Butcher? Or any of those other totally unimportant names, like Patricia Briggs and Jeri Smith-Ready. Or Joe Hill. (I’m also quite excited that my darling friend and fellow Reluctant Adult Carolyn Crane is nominated for her excellent DOUBLE CROSS!) (My other darling friend and fellow Reluctant Adult, Richelle Mead, has of course been nominated for everything, including some awards I suspect they made up just for her: Where did the “Best Redheaded Author” and “Name that Sounds Most Like Michelle but Isn’t” categories come from, and why is there only one nominee?)

I’m actually planning a careful smack-talk Twitter campaign against Mr. Hill, so he better watch out. Did you hear that he likes to spit at kittens? Seriously. What kind of man does that? Not the sort who should be winning an award, that’s for sure! I’ve got your number, Hill.

I showed the hubs–I actually saw on Twitter other people mentioning nominations, and said to him, “Let’s look at the nominations list I won’t be on,” before I clicked the link–and while he’s very happy and all of that even he acknowledged there is a bit of a “One of these things is not like the others,” sort of vibe. Which there totally is. Which makes it even more amazing. I’m really really stunned.

See, “Best of” lists and award nominations are fun and exciting, and everyone wants one. We do. I’m sorry, but if a writer tells you they don’t want to be nominated for an award, they’re lying. They may not be when it comes to a *specific* award, but any award? No. Think of your work. You might not want Elvira the office hypocrite to tell you she loves your whatever, but you’d like *somebody* to love your whatever, right?

Not to mention how happy it makes our publishers and what a difference it could conceivably make for us. I’m not saying it does or that all contests are equal in that regard, but it’s entirely possible that, much like the Emmys did for Arrested Development, an award nomination and/or win could be really helpful career-wise.

But anyway. Here’s the thing. While awards are all well and good, they are, like everything else, subjective. One reviewer may not have liked your book, so they’re not going to nominate it for anything. A group of reviewers may not agree about your book, so they don’t nominate it. Or maybe they just think you look funny or smell of elderberries. Subjective.

But the Goodreads awards are reader-picked, essentially, and that’s why this is so awesome and special and makes me all smiley and emotive in a very uncool way. It’s like I’m a Real Author or something now; look, I got nominated for an award on this huge international reader site! My mind will never stop boggling, seriously.

OMG! I just went to see if I could figure out how the nominations were put together, and saw that I’m nominated for Favorite Goodreads Author too!

(And, in a totally fucking bizarre OMG, Alice Clayton is also nominated for Favorite Goodreads Author. Why is this totally fucking bizarre? Because Alice and I went to high school together and were good friends. And used to write ridiculously purple-prosed porn stories together. No shit.)

Anyway. This is a huge deal for me, that actual readers actually liked my book enough to get it nominated. That’s amazing, and I’m totally stunned and grateful and all of that. Thank you, each and every one of you.

I could swear there was some other stuff I wanted to tell you all about. But I don’t recall it at the moment, and I do need to get to work; it’s just after midnight at the moment, but I’ll be posting this in the morning. So you’re reading this now, which means the morning is gone and it’s already been posted, which makes this whole thing very meta, doesn’t it?

ETA: To add to the meta, now it *is* Friday and I’m adding to this before I post it! Creeeepy. Anyway, I woke up to two emails from Goodreads informing me I’ve been nominated for awards (look at that!) and telling me that the “Goodreads Choice Awards reflect what readers like. There were no secret committees. We did not defer to experts or look at book sales or previous awards. Goodreads nominated 15 books in 23 categories by analyzing statistics about books read by our members from the 47 million books added, rated, and reviewed on the site in 2010. Official nominees were selected based on a book’s popularity and average rating among Goodreads members,” so this really is doubly triply exciting. It wasn’t even a write-in campaign or anything, it was just site statistics or whatever. Again, thank you all so much.

So that’s it for now. Oh, and be afraid, Joe Hill. Be very afraid.

Some News!

This is just a short one–I’ve had quite a crazy couple of days, not really very good ones, to be honest–but I did want to announce this because I’m so excited about it! And I think it might make you guys happy.

I’m sure you guys are all familiar with the UF anthologies Charlaine Harris and Toni Kelner have done in the past, like DEATH’S EXCELLENT VACATION and MANY BLOODY RETURNS. And if you’re not you should be, because they’re hugely fun, and Charlaine and Toni are wonderful writers and very cool ladies; it’s an honor just to know them a little bit.

But it’s an especial, especially, special honor to say that there will be a new Downside story in their next anthology, HOME IMPROVEMENT: UNDEAD EDITION, which will be released August 2, 2011 (at least so Amazon says; I just knew it was August).

I was invited to submit back in April, I think, and submitted in July, but of course I didn’t want to say anything and jinx it. So I can finally say something today, and there it is. A new Downside story for everyone!

It’s a fun little story, I think. I did something a bit different with it; I didn’t want to give spoilers, since I knew the fourth book wouldn’t be out yet, but I didn’t want to do something set in the past or anything either, so…well, you’ll just have to see. But I’m quite pleased with it, which is especially exciting since I have kind of a hard time writing shorts, and I’m just really thrilled about the whole thing.

Which comes in quite handy today, to be honest. I’ve had a pretty lousy couple of days; yesterday was especially bad, at least until I woke up this morning and got more horrible news. The news isn’t directly related to me, it’s just dealing with people I know, but it isn’t good and it isn’t fun, and I may talk more about that another time.

But for now I want to focus on the good stuff. There’s going to be a new Downside story next summer, and it’s not a story in continuity, meaning if you don’t read it you won’t miss anything important series-wise, nor will you be completely lost if you haven’t read the series, at least I hope not (I had a few people read it who hadn’t read the books and they all understood it, so that’s good). I just think it’s fun and kind of exciting, and I had a good time writing it, and I’m very pleased it’s going to be out there and available, especially in such great company.

Yay, such fun to have something positive to post!

It’s the multi-author story I’m participating in on Random House’s Suvudu blog, and it’s enormously fun; it’s a choose-your-own-adventure! Well, not choose your OWN, but the readers vote on what happens next, and we poor writers get less than a week to then write what happens next. I know!! It’s me, Lara Adrian, Kelly Meding, Harry Connolly, and Lucy A. Snyder, and we have a great story, and I’m so excited to get to participate. So please, come on over and get involved! Vote! Read! I think we have a pretty good selection up, though, Lots of colors and sizes; I made sure of the sizes, especially. And again, high quality is very important to me, and being able to offer good, affordable prices is even more so. Of course there are a few tote bags and other swag items, too, as well as a selection for the gentlemen (although that selection is admittedly smaller, since several of the designs are, well, for girls. You’ll see what I mean).

Something else is important to me, too. I think all of you are aware of my feelings about urban fantasy as a genre, how much I love it and love writing it. To that end, we designed several urban fantasy t-shirts; shirts not specific to my world or books, but which celebrate the genre itself. Because you know what? It should be celebrated! So please, check those out. And tell all your UF-fan friends! I’m planning/hoping to add more of those as well if they prove popular, and I really hope they will be. I’d love to see us all being proud, and saying it loud (ha, see what I did there)!

We’ll be adding new designs and items periodically, as well, and of course each time I’ll mention it here.

It’s that time again!

As I think most of you know–I am stunned by the number of birthday messages I’ve gotten on Twitter and Facebook, I can’t thank you all enough!–today is my birthday. My Faerie, who is five, has decided I’m twenty-seven today, and I have told her she’s exactly right. So I’m sticking to that.

Anyway. Every year on my birthday I ask for those who lurk but never comment to just say hello. Of course you’re not obligated to in any way, but it’s fun for me to see who’s out there aside from the group who comments (not that I don’t adore them too). I just get a kick out of it, basically. And it’s even more fun if you leave a little message saying why you read here, or what types of posts you enjoy the most, or whatever–stuff I can use to make sure I’m giving you guys the types of posts you like to read. Remember, my job here on the blog is to entertain you, and make it something you enjoy reading. Yes, it’s mine, and I rant and stuff at times too, but in general, if I’m ranting I want it to be about things that interest you in some way.

And this year I thought we’d make it more fun–although I don’t actually think anyone is going to take me up on it, since you usually don’t–if you want to leave me a question in the comments, or whatever, and I’ll answer it as best as I can.

Again, you’re not obligated to comment, of course. Not at all. If you do comment you’re not obligated to tell me why you read here, or what types of posts you like the best, or what your favorite post was, or anything of that nature. You’re not obligated to ask a question in any way. But if you wanted to, that would be cool, and I would enjoy it.

So if you like, and if you feel comfortable, and if you want to, it would be great to hear from those of you I don’t usually hear from, in addition to those I do.

Wow, this is late in the day to be posting.

Seriously, guys, I cannot recall ever being this busy in my life. I mean, in normal everyday life, not, like, the weeks before my children were born when suddenly the entire house needed to be scrubbed and redecorated, or the weeks before my wedding when the entire house needed to be scrubbed and redecorated and I had a houseful of guests and I needed to get manicures and hairdos and fittings and all of that stuff, or when we move. This is just my daily task-list growing longer and longer. (Oh, and before I forget, did you all see the UNHOLY MAGIC playlist on iTunes? You know I don’t get paid or anything when you purchase it, but the artists do; I just put them together in case anyone was curious about the music in the books and would like to hear it. This way you don’t have to hunt around and not know which songs are mentioned or whatever.)

I just finished a short story for an anthology; it’s a Downside story but because I didn’t want to give spoilers, and am well aware that most readers have never heard of me or my books, I wrote it from an outsider’s point of view, which was fun. You know what the most fun part of it was, though, which is really weird? Getting to actually describe Chess head to foot. You know, it’s hard to find ways to describe characters when you write from their POV; you don’t want to use hoary old tricks like them looking at themselves in the mirror, and really, just about any other sort of trick to describe your characters feel hoary.

MC: Oh, Friend #1, I hate my hair.

Friend #1: Nonsense. I wish I had long blond curls like yours.

Do you know what I mean? I don’t describe my characters too closely, I don’t think of them in terms of what actor they look like and would never describe them that way. I like to leave that up to you guys to fill in, really. Which makes me think of a fun contest! Which I may mention at the end of this post.

Anyway. So it was really fun to write a short where, because the MC of that story doesn’t know these people, he can actually take in the details of their appearances. They’re still not really facially described, but there’s a much more complete description, down to things like what Chess’s bag actually looks like. (I’ll share that one; it’s faded army-green canvas.) The story is tentatively titled Rick the Brave, but I’m still trying to come up with something better.

Now I have two other projects on my plate, one of which is another short for something else, and one of which is a new series-starter WIP which I’m extremely excited about. I’m not super far into it yet, but what I have I’m very happy with, which is a great feeling. It’s tentatively called Stone and Steam, but that will probably change.

I also have a to-do list which includes five interviews, which I really need to get to. And, I’ve got a couple of dozen emails and forum messages in my inbox from readers, relating to the Downside books, which I swear I will answer, my days have just been disappearing from me lately. But I do get those emails, I do read them, and I do appreciate them immensely. Nothing in this world is as amazing as getting an email from a reader who loved your work. (Well, okay. Sorry readers, but there are a few better moments, I have to admit. Holding your baby for the first time is pretty fucking amazing. But outside of stuff like that, reader email tops the list.)

BUT. That does bring me to a question most of the emails have been asking, and a ton of people on Twitter have been asking, as well as here on the blog. And I really wasn’t able to answer the question, although I’ve known the answer for, oh, three weeks or so now. Ready?

YES. There WILL be more Downside books!!

I don’t have any more details I can share as to number or dates or anything, although I think I can pretty safely say, considering it’s now July, that we’re talking about next year. We’re still working a lot of details out. But I’m extremely pleased and excited, and I hope you guys are too. Read the rest of this entry »

2. I am guest blogging today over at Marta Acosta’s Vampire Wire, about how I created Chess Putnam and giving a little more insight into what kind of character she is and yes, into her addiction. I actually find I’m discussing the drug use in the book quite a bit these days, and there’s a reason for that, same as the reason why I uploaded the first five chapters of the book here.

Yes, of course I want you to read it and decide you can’t wait to read more, and rush to buy the book on Tuesday or pre-order it now, which you are of course perfectly welcome to do. But I also want to make it clear exactly what the book is, and what you’ll find inside. I don’t want there to be any surprises. The back cover copy tells you very clearly that the book is about a drug addict. That is true. She is. Drugs are used in the book(s), quite a bit. If that’s a problem for you don’t buy the book, and I mean that in the nicest possible way. I don’t want you to buy a book you’re not going to like, or that will upset you or make you uncomfortable! I want you to be happy with it, and enjoy it. So please do be aware. The back cover copy isn’t lying to you. It’s there to tell you what you’ll find inside the book. You should pay attention to it, and that goes for all books, really.

One more thing. Remember how I was going to do a little thank-you giveaway, where if you buy UG I’ll send you the first three chapters of UNHOLY MAGIC? Yeah, I figured what the heck. Why go through all that trouble, for both you and me? Instead I’m just going to go ahead and load those first three chapters onto the site, probably next Friday or Saturday. If you are absolutely dying to get the chapters earlier, go ahead and email me anyway, with your overflowing heartwarming praise for UNHOLY GHOSTS, and I’ll send you the chapters. But it’s not necessary. I want to give you guys a sneak peek, so that’s what I’m going to do.

First, I found out the other day that UNHOLY GHOSTS is a Reviewer Top Pick! in the June issue of Romantic Times magazine. The review says, in part:

Fans of urban fantasy will find themselves sleep deprived after they start this new series. It’s that hard to put down. Characters with larger-than-life personalities rule against a dark and dangerous backdrop. This is an exciting world you’ll want to escape into again and again. Don’t worry, the next will be out in July!

I also have some VERY IMPORTANT NEWS. Due to some seekrit behind-the-scenes-y bookstore-and-publisher stuff, the release date for UNHOLY MAGIC, the second Downside book, has been delayed by two weeks to JULY 6TH. (Unless something changes, this means you Australia/New Zealand folks will get the book one week before the US, Canada, and the UK/Ireland. Yay you, you get to be the first ones finally, how cool!) Anyway. I apologize to everyone but about the delay but I swear it’s for a good reason and we just might have some stuff here to at least make the waiting easier. So make sure you check back!
